Nov. 2 – Fall Harvest and Cleanup
On this day, a number of items were undertaken:
- I harvested all of the beets from the vegetable garden.
- I cut off the beet greens and sorted the better tops from the brown leaves and stems.
- I cut the beet greens in half and put them in boiling water to blanch them.
- After about 2 minutes, I rinsed them in cold water and let them sit in the colander.
- Portions of beet greens were put into freezer bags, labelled, and put into the freezer.
- We will be adding them to soups and stews mainly, but they could be mixed with other vegetables too for a dinner assortment.
- The beets were cleaned and the stems cut off. they were sorted then put into freezer bags, still fresh for storage in the refrigerator.
- We cooked some beets for dinner that night too.
- I removed most of the nasturtiums since there was enough frost to wither them. I collected nasturtium seeds for next year. I will continue to do this for another 2 weeks.
- I went to the front flower gardens and cut down any stems without green leaves and took the prunings to the compost.
- We have stockpiled smaller leaves for winter mulch. We have been using them for winter root protection for shrubs and perennials.
- A number of perennials are still blooming and i am still taking photos, some of them to be shared over the winter months.
